Breakfast Casserole Bites

Ready in 30 minutes | Serves 4-6 people |  Makes 12

Ingredients

  • 2 pieces of Whole Grain Sandwich Bread

  • 8 Eggs

  • 1/2 cup of Milk

  • Salt & Pepper to taste

  • 4 oz grated Cheese (Colby Jack or Cheddar)

  • 1/2 lb Cooked and crumbled Breakfast Sausage or Turkey Bacon

  • Foil Muffin Holders for Baking (do not use paper as they will stick)

Preparation

  1. Preheat oven 350 degrees F.

  2. Distribute 12 foil muffin holders into muffin baking pan.

  3. Cut bread into half inch squares.

  4. In a mixing bowl, whisk together eggs and milk. Add a few dashes of salt and pepper as desired.

  5. Evenly distribue egg mixture into each muffin holder (bread pieces will float to top which is ok).

  6. Sprinkle an equal amount of grated cheese and crumbled bacon (or sausage) into each muffin holder on top of egg mixture.

  7. Bake at 350 degrees for 15 minutes or until eggs are set. Enjoy or freeze for another day!
