Farmers Market Stir-Fry

This is a quick and delicious way to get a variety of colorful veggies on your plate!
Ready in 20 minutes | Makes 3-4 servings
Ingredients
Teriyaki Sauce:
1/4 cup Soy Sauce (low sodium)
3/4 cup Water
1 tablespoon peeled and freshly grated Ginger
2 tablespoons Honey
Stir Fry:
3-4 servings of Brown Rice
2-3 tablespoons of Olive Oil
2-3 cups of Sliced Veggies (any veggies will do! I love carrots, zucchini, broccoli, and mushrooms).
Optional Protein such as Chicken or Shrimp
Optional side of Pineapple of Mango
Preparation
Cook the brown rice according to directions on the package.
Make the teriyaki sauce by combining the soy sauce, water, ginger and honey in a small pot on high. Bring to a boil then keep on low simmer while you prepare the rest of the meal.
Chop veggies and protein.
In a wok or saute pan heat the olive oil over medium heat then add the veggies and protein. If using mushrooms add at the very end as they don’t take long to cook.
Once vegetables are soft and the meat is cooked through, add the sauce.
Enjoy over cooked rice, garnish with green onions and a side of freshly sliced pineapple or mango.
