Cousin Molly’s Chicken Stew, Italiano Style

Ready in 20 minutes | Serves 4 people  

Ingredients

  • 2 tablespoons of Olive Oil

  • 1 whole Yellow Onion diced in half moons

  • 8 boneless Chicken Thighs

  • 3/4 cup Carrots peeled and diced medium

  • 1 tablespoon minced Garlic

  • 1 1/2 cups of Crushed Tomatoes

  • 2 Celery Stalks halved lengthwise and cubed

  • 1 cup low sodium Chicken Stock or Broth

  • pinch of Salt and Pepper

  • splash of Balsamic Vinegar

  • 1/4 cup fresh Basil

Preparation

  1. Season chicken well with salt and pepper.

  2. Heat 1 tablespoon of olive oil in a hot pan just before smoking.

  3. Add chicken and sear until golden brown.

  4. Remove chicken and drain pan, add 1 tablespoon of olive oil . Add onions until soft about 5 minutes. Add carrots and garlic until they begin to soften, about 5-7 minutes. Add crushed tomatoes and celery and let cook for a few minutes.

  5. Add chicken back into the stew.

  6. Add chicken stock and simmer for about 25 minutes.

  7. Season with salt and pepper, balsamic vinegar and fresh chopped basil.
